Then how it's served (molds, layers, ripples, bars and pops). Presenting it covers baskets, cookies and cones, sauces, toppings and decorations. Then the recipes start: ices, classic (not fruit or nut), fruit and nut, cream-free, low-fat, sherbet, frozen yogurt. Now for the elegant ones: bombes, terrines, tortes, and gateaux. And hot ice cream--Baked Alaska, crepes, croissants, etc. And finally, elegant iced desserts: chocolate castles, lace crepes, hazelnut cones, florentine baskets, and trifles. Almost 250 pages, plus five closely spaced index pages! I actually found many, many recipes that I wanted to make just the way they were, with no tweaking. That's saying a lot for me. Even so, if I get tired of the basic strawberry ice cream, I can throw in coconut, or chocolate, or whatever (the instructions tell me how and when to add things to have them not sink or float) and I have a new flavor.
